yep, use your hoods and tape some sort of plastic bag to them. Keep your entire gearbag in a garbage bag if you can, or at least make some sort of cover for it. Also watch for what you're setting it down in/on as water will "wick" up into bags. Bring LOTS of dry lens cloths to clean your front element.
Also, if you can, tripods and umbrellas make it a lot easier. Just bring some bungees/duct tape and a nice golf umbrella. Even if the camera never sits on the actual tripod, you can use it to hold the umbrella giving yourself a nice dry area to work from if it's not windy. You can then hang you bag under the tripod to keep it off the ground.

Shower cap or a garbage bag with a hole cut in it and stout rubber band. I've done both.

Just as a warning on this - I tried to seal my camera with a garbage bag at Vic Falls - and didn't tape the back as I wanted to use the controls (bag was opaque).
Camera got sufficient water damage from spray on my hands to need the entire internals replaced.
Get a clear bag and TOTALLY seal it.
