I'd go with a D70 (since you mentioned it), or an XTi. I rarely recommend a D40. That's not to say it can't take great photos, my reasons are unrelated to image quality.
When it comes down to it, this has been said before, you are buying into a system. So, look past the individual camera, and see if one brand offers better lenses, or speedlights, or whatever. Ergonomics are important, as well. Go somewhere and hold the cameras you are contemplating.
FWIW, there was/is a nice D70 in the "For Sale" section of this forum.
